Instructions
- Preheat oven to 350°F (175°C).
- In a large skillet over medium-high heat, cook ground beef, diced onion, and taco seasoning together until the beef is no longer pink. Drain excess fat.
- In a bowl, combine shredded cheddar and Monterey Jack cheeses.
- Pour 1/2 cup of enchilada sauce into the bottom of a baking dish to coat.
- Lay a tortilla flat, spoon the beef mixture down the center, and sprinkle with about 1/8 cup of the cheese blend.
- Roll the tortilla tightly and place seam-side down in the prepared baking dish.
- Repeat with remaining tortillas and beef mixture.
- Pour the remaining enchilada sauce over the top and sprinkle with the rest of the cheese.
- Bake uncovered for 15–20 minutes or until cheese is melted and bubbly.
- Let rest for 5 minutes before serving. Garnish with your favorite toppings if desired.
