Description

This Ground Beef Taco Cabbage Skillet is a quick, cheesy, and low-carb dinner that’s packed with bold taco flavors. Made in just one pan, it’s perfect for busy weeknights, keto meal prep, or a satisfying family meal with minimal cleanup.

Ingredients

Scale
  • 1 pound lean ground beef: provides rich, hearty flavor and protein
  • 5 cups green cabbage, shredded or chopped: adds crunch, fiber, and volume
  • 1/4 cup low carb taco seasoning: infuses the dish with Tex-Mex spices
  • 1 tablespoon dry minced onion: enhances flavor without adding moisture
  • 1/4 cup water: helps steam the cabbage and blend the seasoning
  • 1 1/2 cups shredded cheddar cheese: melts over the skillet for a gooey finish

Instructions

  1. In a large skillet over medium heat, brown the ground beef, breaking it apart as it cooks. Drain any excess fat.
  2. Stir in the shredded cabbage, taco seasoning, dry minced onion, and water. Mix well to evenly distribute the seasoning.
  3. Continue cooking for 8–10 minutes, stirring occasionally, until the cabbage is tender but still slightly crisp.
  4. Sprinkle the shredded cheddar cheese evenly over the mixture.
  5. Cover the skillet with a lid and reduce heat to low. Cook for 5–10 minutes, or until the cheese is melted and bubbly.
  6. Remove from heat and serve immediately while hot.

Notes

  • You can substitute one 14 oz bag of cabbage coleslaw mix for fresh cabbage to save time.
  • Adjust taco seasoning to taste or use homemade seasoning for lower sodium.
  • Leftovers can be stored in an airtight container in the fridge for up to 4 days.
  • Top with sour cream, avocado, or jalapeños for added flavor.
