- 1 (12 oz) bottle Guinness Extra Stout
- 1/2 cup unsalted butter
- 1 cup semi-sweet chocolate chips, divided
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 teaspoon instant espresso powder
- 2 large eggs
- 1/2 cup all-purpose flour
- 1/4 cup unsweetened cocoa powder
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
Instructions
- In a small saucepan, bring the Guinness to a boil over medium-high heat. Reduce to medium and simmer until reduced to 1/2 cup, about 20 minutes. Set aside to cool for at least 10 minutes.
- Preheat oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper and butter the sides.
- In a microwave-safe bowl, melt butter with 3/4 cup of the chocolate chips in 30-second intervals, stirring until smooth.
- Stir in the sugar, 1/2 cup reduced Guinness, vanilla extract, and espresso powder.
- In a separate bowl, whisk the eggs until bubbly on top, about 1 minute. Add eggs to the chocolate mixture and stir until combined.
- Sift together the flour, cocoa powder, baking powder, and salt in another bowl. Add dry ingredients to the wet ingredients and mix until just combined.
- Fold in the remaining 1/4 cup chocolate chips.
- Spread the batter evenly in the prepared pan and bake for 35–40 minutes, or until a toothpick inserted comes out with a few moist crumbs.
- Let cool completely before slicing into squares.
