Description

These Guinness Brownies are rich, fudgy, and deeply chocolaty with a grown-up twist thanks to reduced Guinness stout. They’re perfect for any occasion, not just St. Patrick’s Day, and deliver an indulgent dessert experience without overwhelming sweetness.


Ingredients

  • 1 (12 oz) bottle Guinness Extra Stout
  • 1/2 cup unsalted butter
  • 1 cup semi-sweet chocolate chips, divided
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon instant espresso powder
  • 2 large eggs
  • 1/2 cup all-purpose flour
  • 1/4 cup unsweetened cocoa powder
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt


Instructions

  1. In a small saucepan, bring the Guinness to a boil over medium-high heat. Reduce to medium and simmer until reduced to 1/2 cup, about 20 minutes. Set aside to cool for at least 10 minutes.
  2. Preheat oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper and butter the sides.
  3. In a microwave-safe bowl, melt butter with 3/4 cup of the chocolate chips in 30-second intervals, stirring until smooth.
  4. Stir in the sugar, 1/2 cup reduced Guinness, vanilla extract, and espresso powder.
  5. In a separate bowl, whisk the eggs until bubbly on top, about 1 minute. Add eggs to the chocolate mixture and stir until combined.
  6. Sift together the flour, cocoa powder, baking powder, and salt in another bowl. Add dry ingredients to the wet ingredients and mix until just combined.
  7. Fold in the remaining 1/4 cup chocolate chips.
  8. Spread the batter evenly in the prepared pan and bake for 35–40 minutes, or until a toothpick inserted comes out with a few moist crumbs.
  9. Let cool completely before slicing into squares.
