Description

These Halloween Whoopie Pies are a festive and delicious treat that combine soft, cakey chocolate cookies with a creamy marshmallow filling. Perfect for Halloween parties or fall baking, these pies are a sweet and spooky way to celebrate the season.


Ingredients

  • 1 2/3 cups all-purpose flour
  • 2/3 cup unsweetened cocoa powder
  • 1 1/2 teaspoons baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup buttermilk
  • 1/2 cup unsalted butter, softened (for filling)
  • 1 1/2 cups powdered sugar
  • 1 cup marshmallow fluff
  • 1 teaspoon vanilla extract (for filling)
  • Orange food coloring (optional)
  • Halloween sprinkles (optional, for decoration)


Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a medium bowl, whisk together the flour, cocoa powder, baking soda, baking powder, and salt.
  3. In a large mixing bowl, cream together the butter and sugar until light and fluffy.
  4. Add the egg and vanilla extract, and beat until fully combined.
  5. Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk, beginning and ending with the dry ingredients. Mix until just combined.
  6. Drop rounded tablespoons of batter onto the prepared baking sheets, spacing them 2 inches apart.
  7. Bake for 10-12 minutes, or until the tops are set and spring back when lightly touched. Let cool on the baking sheets for 5 minutes before transferring to a wire rack to cool completely.
  8. To make the filling, beat the butter until creamy, then add the powdered sugar and beat until fluffy.
  9. Mix in the marshmallow fluff and vanilla extract until well combined. If desired, add orange food coloring and mix until evenly colored.
  10. Once the cookies are completely cool, spread or pipe the filling onto the flat side of half the cookies and top with the remaining cookies to form sandwiches.
  11. Roll the edges of the pies in Halloween sprinkles, if using. Serve immediately, or store in an airtight container for up to 3 days.

Notes

  • Be sure to let the cookies cool completely before filling to prevent the filling from melting.
  • If you don’t have buttermilk, you can substitute it with 1 cup of milk and 1 tablespoon of vinegar or lemon juice.
  • Feel free to adjust the food coloring to create different festive hues like purple or green.
  • These whoopie pies can be made ahead of time and stored for up to 3 days at room temperature.
