  • 1/4 teaspoon gel food coloring (or as desired)
  • 1/2 cup confectioners’ sugar, divided, for coating and dusting


Instructions

  1. Line a large baking sheet with parchment paper and dust it evenly with 1/4 cup confectioners’ sugar.
  2. In a deep heavy-bottomed saucepan, combine 2 cups granulated sugar, 3/4 cup light corn syrup, and 1 cup water. Stir gently until mixed.
  3. Attach a candy thermometer to the side of the pan, ensuring it does not touch the bottom.
  4. Heat over medium heat, stirring only until the sugar dissolves completely.
  5. Stop stirring and continue cooking until the mixture reaches 300°F (149°C), the hard-crack stage.
  6. Remove the saucepan from the heat immediately.
  7. Carefully stir in 1 teaspoon flavoring extract and food coloring until evenly combined.
  8. Pour the hot candy mixture onto the prepared baking sheet and allow it to spread naturally.
  9. Let the candy cool until warm but still pliable.
  10. Use kitchen scissors or a sharp knife to cut the candy into small irregular pieces.
  11. Toss the candy pieces with the remaining 1/4 cup confectioners’ sugar to prevent sticking.
  12. Store in an airtight container with parchment paper between layers.
