- 1/3 cup (111 g) honey, agave nectar, or pure maple syrup
- 1 teaspoon vanilla extract
- 1 large egg
- 1 cup shredded zucchini, from about 1 medium zucchini
- 1 ripe banana, mashed, or 1/4 cup unsweetened applesauce
- 1/2 cup (120 g) unsweetened vanilla almond milk
- 1/2 cup (90 g) regular or mini chocolate chips, dairy-free if desired
Instructions
- Preheat the oven to 350°F (175°C). Line a 12-cup muffin pan with liners and lightly coat the inside of the liners with nonstick cooking spray.
- Shred the zucchini and gently squeeze out excess moisture using paper towels or a clean kitchen towel.
- In a medium bowl, whisk together the whole wheat pastry flour, cocoa powder, baking soda, and salt.
- In a separate large bowl, mix the melted coconut oil, honey or maple syrup, vanilla extract, and egg until smooth.
- Add the shredded zucchini, mashed banana or applesauce, and almond milk to the wet ingredients and mix until combined.
- Gradually add the dry ingredients to the wet ingredients and stir just until combined. Do not overmix.
- Gently fold in the chocolate chips.
- Divide the batter evenly among the 12 prepared muffin cups.
- Bake for 22 to 25 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
- Cool the muffins in the pan for 5 minutes, then transfer them to a wire rack to cool completely.
