Description

Instructions

  1. Preheat the oven to 375°F and lightly grease a 12-cup muffin tin with olive oil or nonstick spray.
  2. Wash and chop the spinach, bell peppers, tomatoes, and onions into small pieces for even cooking.
  3. In a large mixing bowl, whisk together the eggs, milk, salt, and black pepper until smooth and slightly frothy.
  4. Stir the chopped vegetables, shredded cheese, and parsley into the egg mixture until evenly combined.
  5. Pour the mixture evenly into the muffin cups, filling each about three-quarters full.
  6. Bake for 18 to 22 minutes or until the centers are set and the tops are lightly golden.
  7. Remove the muffin tin from the oven and allow the egg muffins to cool for 5 minutes before carefully removing them.
