Ingredients

  • 1 cup very ripe bananas, mashed (2 large)
  • 1 cup grated zucchini, squeezed dry
  • 1 large egg
  • 1/4 cup olive oil or avocado oil
  • 1/2 cup maple syrup or honey
  • 2 teaspoons pure vanilla extract
  • 1 teaspoon cinnamon
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 3/4 cups whole wheat flour, spelt flour, or 2 cups 3 tablespoons all-purpose flour


Instructions

  1. Preheat the oven to 350°F (175°C) and line a 9×5-inch loaf pan with parchment paper or spray it with cooking spray.
  2. Mash the bananas in a large bowl with a fork. Add the grated zucchini to the mashed bananas.
  3. In the same bowl, add the egg, oil, maple syrup, vanilla extract, cinnamon, baking powder, baking soda, and salt. Whisk until well combined.
  4. Gradually add the flour and stir until just combined. Avoid overmixing.
  5. Transfer the batter to the prepared loaf pan and smooth the top with a spatula.
  6. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  7. Cool the bread in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
