Healthy Zucchini Oatmeal Cookies are soft, chewy, warmly spiced cookies made with quick oats, whole wheat flour, fresh zucchini, pure maple syrup, cinnamon, and nutmeg. They taste like a cross between classic oatmeal cookies and moist zucchini bread and can easily be adapted for dairy-free or gluten-free diets.

- 1 cup (100g) instant oats
- 3/4 cup (90g) whole wheat flour
- 1 1/2 teaspoons baking powder
- 1 1/2 teaspoons ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 2 tablespoons (28g) coconut oil or unsalted butter, melted and slightly cooled
- 1 large egg, at room temperature
- 1 teaspoon vanilla extract
- 1/2 cup (120ml) pure maple syrup
- 1 cup (90g) freshly grated zucchini, measured before thoroughly patting dry
Instructions
- Grate the zucchini and measure 1 cup before drying it. Spread it between layers of paper towels and press firmly until as much excess moisture as possible has been removed.
- In a medium bowl, whisk together the instant oats, whole wheat flour, baking powder, cinnamon, nutmeg, and salt.
- In a separate bowl, whisk together the melted coconut oil or butter, egg, and vanilla extract until thoroughly combined.
- Stir the pure maple syrup into the wet ingredients.
- Add the dry oat mixture to the wet mixture and stir just until incorporated.
- Gently fold in the thoroughly dried grated zucchini until evenly distributed.
- Cover and chill the cookie dough for 30 minutes.
- Preheat the oven to 325°F (163°C) and line a baking sheet with parchment paper or a silicone baking mat.
- Drop the chilled dough onto the prepared baking sheet in 15 rounded portions using a spoon and spatula.
- Flatten each portion to approximately 3/8-inch thick and smooth the edges if desired.
- Bake for 11 to 14 minutes, until the edges are set but the centers still appear slightly soft.
- Cool the cookies on the baking sheet for 10 minutes before transferring them to a wire rack to cool completely.
Notes
- Measure the oats and flour carefully because excess dry ingredients can make the cookies cakey, bready, or dry.
- Measure the zucchini before pressing out its moisture, then dry it very thoroughly to prevent wet or fragile cookies.
- Do not add extra zucchini because the additional moisture can cause the cookies to fall apart.
- Old-fashioned rolled oats can be used if pulsed in a food processor or blender until they are about one-quarter to one-eighth of their original size.
- White whole wheat flour, whole wheat pastry flour, or all-purpose flour can replace the whole wheat flour.
- Certified gluten-free instant oats and a suitable gluten-free flour can be used for a gluten-free variation.
- Honey or agave may be substituted for the pure maple syrup.
- Avoid water-based sugar-free maple syrup because it can make the cookies cakey or bready.
- For a dairy-free version, use coconut oil or suitable vegan stick-style butter.
- Do not overbake. The centers should still feel slightly soft when the cookies are removed from the oven because they continue cooking on the hot baking sheet.
- Store cooled cookies in an airtight container for a couple of days at room temperature or about one week in the refrigerator.
- Fully baked and cooled cookies can be frozen and thawed as needed.
