Description

Ingredients

  • 2 tbsp olive oil
  • 1 medium onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 garlic cloves, minced
  • 16 oz (450 g) cremini mushrooms, sliced
  • 2 tbsp tomato paste
  • 1 tsp dried thyme
  • 1 tsp smoked paprika
  • 1 bay leaf
  • 1 1/2 cups brown or green lentils, rinsed
  • 1 can (14.5 oz) diced tomatoes
  • 5 cups vegetable broth
  • 2 cups chopped kale or spinach (optional)
  • Salt, to taste
  • Black pepper, to taste
  • 2 tbsp fresh parsley, chopped, for garnish
  • 1 tbsp lemon juice (optional)


Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the onion, carrots, and celery, then cook for about 5 minutes until softened.
  2. Stir in the garlic and sliced mushrooms. Cook for another 5โ€“7 minutes until the mushrooms release their moisture and begin to brown.
  3. Add the tomato paste, thyme, and smoked paprika. Stir continuously for 1 minute to toast the spices.
  4. Add the rinsed lentils, diced tomatoes, vegetable broth, and bay leaf. Stir well to combine.
  5. Bring the stew to a boil, then reduce the heat to low. Cover partially and simmer for 30โ€“35 minutes, or until the lentils are tender.
  6. Stir in the kale or spinach during the final 5 minutes of cooking, if using.
  7. Season with salt and black pepper to taste. Remove the bay leaf before serving.
  8. Finish with chopped parsley and an optional squeeze of lemon juice. Serve warm with crusty bread or your favorite side.

  • Brown or green lentils hold their shape best for this recipe.
  • Allow the mushrooms to brown well for the richest flavor.
  • Add extra vegetable broth if the stew becomes too thick.
