- 1 cup basmati rice, rinsed
- 1 tablespoon coconut oil or butter
- 1/4 teaspoon salt
- Zest of 1/2 lemon
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 2 cups chicken stock or vegetable stock
- Juice of 1/2 lemon
- Optional: Fresh parsley or basil, chopped, for garnish
Instructions
- Rinse the basmati rice under cold water until the water runs mostly clear.
- Combine the rice, coconut oil or butter, salt, lemon zest, dried basil, dried oregano, and stock in a medium saucepan or rice cooker.
- If using the stovetop, bring the mixture to a boil over medium-high heat.
- Reduce the heat to low, cover, and simmer for about 15 minutes or until the liquid is absorbed.
- Remove the pan from the heat and let the rice rest, covered, for 10 minutes.
- Fluff the rice gently with a fork.
- Stir in the fresh lemon juice just before serving.
- Garnish with fresh herbs if desired and serve warm.

- Rinse the rice well to remove excess starch for fluffier grains.
- Add the lemon juice after cooking to preserve its fresh citrus flavor.
- Use vegetable stock for a vegetarian version.
- Fresh basil or oregano can replace dried herbs.
