Instructions
- Peel, core, and dice the apples into pieces approximately 1/4 to 1/2 inch in size.
- In a mixing bowl, whisk together the flour, granulated sugar, baking powder, salt, and cinnamon.
- Make a well in the center of the dry ingredients. Add 1/3 cup milk, eggs, and applesauce. Stir gently just until combined.
- Fold the diced apples into the batter without overmixing.
- Pour approximately 1 1/2 inches of canola or vegetable oil into a Dutch oven or heavy-bottomed pot. Heat the oil to 375°F.
- Carefully drop approximately 1/4 cup of batter per fritter into the hot oil, spreading the batter slightly so the fritters are not too thick.
- Fry for approximately 2 minutes per side, or until both sides are golden brown and the centers are cooked through.
- Remove the fritters with a slotted spoon and transfer them to paper towels to drain excess oil.
- To prepare the glaze, whisk together the powdered sugar, 1/4 cup milk, and vanilla extract until smooth.
- Allow the fritters to cool slightly, then dip each fritter into the vanilla glaze, coating both sides.
