Description

Instructions

  1. In a food processor, combine flour, salt, and sugar. Pulse briefly.
  2. Add cold cubed butter and pulse until mixture resembles coarse crumbs.
  3. Slowly add ice water, 1 tablespoon at a time, until dough comes together.
  4. Divide dough into two discs, wrap in plastic, and chill for at least 1 hour.
  5. Preheat oven to 425°F (220°C).
  6. In a bowl, mix cherries, sugar, cornstarch, lemon juice, lemon zest, and vanilla extract until combined.
  7. Roll out one dough disc and fit into a 9-inch pie pan. Prick the bottom with a fork.
  8. Pour the cherry filling into the crust and spread evenly.
  9. Roll out the second dough disc and cut into ½-inch strips to create a lattice top.
  10. Arrange lattice on top of filling and crimp edges to seal.
  11. Freeze the assembled pie for 20 minutes to firm up.
  12. Brush the crust with egg wash (egg + milk), then sprinkle with brown sugar.
  13. Bake for 20 minutes at 425°F (220°C), then reduce temperature to 350°F (180°C) and bake for another 30 minutes, until crust is golden and filling is bubbling.
  14. Let the pie cool for at least 2 hours before slicing to allow the filling to set.
