- 12 to 14 flour or flour+corn tortillas
- 1 (20-ounce) can jackfruit, drained and shredded
- 1 teaspoon extra-virgin olive oil
- 2 garlic cloves, grated
- 1 teaspoon cumin
- 1 teaspoon coriander
- Pinch cayenne pepper
- ½ teaspoon sea salt
- Freshly ground black pepper
- 1 (4-ounce) can diced green chiles, drained
- ¾ cup refried beans
- ½ cup jack cheese
- ¼ cup chopped scallions
- Extra-virgin olive oil cooking spray
- Toppings: guacamole, pico de gallo, cilantro, serranos
Instructions
- Preheat the oven to 400°F and line a baking sheet with parchment paper.
- Toss the shredded jackfruit with olive oil, garlic, cumin, coriander, cayenne, salt, pepper, and green chiles. Spread it out on the baking sheet and bake for 15 to 18 minutes, or until lightly golden.
- Warm the tortillas in the oven for 3 to 5 minutes, or wrap them in a damp paper towel and microwave for 30 seconds.
- Spread a thin line of refried beans down one side of each tortilla. Add the jackfruit mixture, cheese, and scallions.
- Roll the tortillas tightly and place them seam side down on a parchment-lined baking sheet.
- Spray the taquitos generously with olive oil cooking spray and bake for 20 minutes, or until golden brown and crispy.
- Top the taquitos with your favorite toppings like guacamole, pico de gallo, cilantro, and serranos. Serve immediately.
