Instructions

  2. In a large bowl, mix the cornmeal, all-purpose flour, baking powder, and salt until well combined.
  3. In another bowl, whisk together the mashed sweet potatoes, melted butter, honey, eggs, and buttermilk until smooth.
  4. Gradually add the wet ingredients to the dry ingredients and stir gently until just combined. Do not overmix.
  5. Pour the batter into the prepared baking dish and spread evenly.
  6. Bake for 25–30 minutes or until a toothpick inserted in the center comes out clean.
  7. While baking, prepare the honey butter by mixing 1/4 cup honey with 1/2 cup softened butter until creamy.
  8. Allow the cornbread to cool slightly, cut into squares, and serve warm with honey butter.
