Description

Ingredients

  • 1/2 cup honey (citrus blossom honey preferred)
  • 2 cups warm water
  • 1/2 cup lime or lemon juice (or a combination of both)
  • 1 cup cold water
  • 1 cup lemon balm, lightly packed
  • Lime or lemon slices
  • 2 cups cold sparkling water
  • Optional: 1 ounce of light liquor per serving (rum, gin, or St. Germain)


Instructions

  1. In a large pitcher, mix honey and warm water until the honey is dissolved.
  2. Add lime or lemon juice and 1 cup cold water. Stir to combine.
  3. Lightly crush lemon balm leaves and add them to the mixture. Use a muddler or the back of a wooden spoon to smash the lemon balm in the bottom of the pitcher.
  4. Add lime or lemon slices and refrigerate the mixture for about an hour to allow the flavors to meld.
  5. Once chilled, pour in 2 cups of cold sparkling water and stir gently.
  6. Strain the mixture into individual glasses filled with crushed ice.
  7. Garnish with fresh lemon balm leaves and citrus slices. For an alcoholic version, add 1 ounce of light liquor (rum, gin, or St. Germain) per glass.

Notes

  • If fresh lemon balm is unavailable, substitute with mint for a refreshing twist.
  • Make the base ahead of time and refrigerate until ready to serve. Just add the sparkling water before serving to maintain the fizz.
