A Bruschetta Bar is a fun, customizable way to serve appetizers or a casual meal, featuring crispy toasted bread, creamy mascarpone cheese, and a variety of delicious toppings. It’s perfect for parties, family gatherings, or an easy dinner with lots of flavor combinations.

- 1 loaf of baguette
- 8 oz mascarpone cheese
- 1/2 cup balsamic vinegar
- 2-3 slices prosciutto
- 1/2 cup dates, chopped
- 2 tsp fresh rosemary, chopped
- 1/4 tsp dried basil or 2 tbsp fresh basil
- 4 tbsp honey (or to taste)
- 1/2 cup dried apricots, chopped
- 1/2 cup dried cranberries
- 1/2 cup dried blueberries
- 2-3 tbsp pistachios, coarsely chopped
- 1/4 cup slivered almonds, toasted
- Kosher salt, to taste
- Fresh ground pepper, to taste
- Olive oil (for brushing on bread)
Instructions
- In a small saucepan, combine balsamic vinegar and honey. Simmer over low heat for 15 minutes, stirring occasionally, until the sauce reduces by half and thickens. Set aside to cool.
- Preheat the oven to broil. Slice the baguette into 1-inch pieces. Brush the slices with olive oil and broil until golden brown and crispy, about 2-3 minutes. Watch carefully to prevent burning.
- Divide the mascarpone cheese into four portions. Add salt, pepper, and dried basil (or fresh basil, if using) to one portion of the cheese.
- Spread the mascarpone mixture onto the toasted bread slices.
- For each bruschetta topping: top with the following combinations and drizzle with balsamic reduction:
- Option 1: Prosciutto, chopped dates, and fresh basil
- Option 2: Dried apricots, pistachios, and balsamic reduction
- Option 3: Dried cranberries, rosemary, and balsamic reduction
- Option 4: Dried blueberries and slivered almonds, drizzled with balsamic reduction
- Slice each bruschetta into 1-2 inch pieces and serve immediately.

- Toast the bread carefully to avoid burning.

- Use fresh basil for a brighter flavor, or dried basil for a more subtle, herbaceous taste.
