  • 2 cups powdered sugar
  • 1 tablespoon maple syrup
  • 1-2 tablespoons milk


Instructions

  1. Preheat the oven to 350°F and line a muffin pan with paper muffin liners.
  2. In a large mixing bowl, whisk together the vegetable oil, eggs, granulated sugar, 1/2 cup brown sugar, pumpkin puree, cinnamon, nutmeg, ginger, 1 1/2 teaspoons salt, and baking powder until evenly combined.
  3. Add the all-purpose flour and gently mix just until no obvious streaks of dry flour remain. Do not overmix the batter.
  4. Prepare the streusel by combining the chopped pecans, butter, rolled oats, 2 tablespoons brown sugar, and 1/4 teaspoon salt in a small bowl. Work the ingredients together with your fingertips until crumbly clusters form.
  5. Divide the pumpkin batter evenly among the prepared muffin cups, using about 1/4 cup batter per muffin.
  6. Sprinkle the pecan streusel evenly over the muffin batter.
  7. Bake for 15-17 minutes, or until a toothpick inserted into the muffin portion comes out clean or with a few moist crumbs.
  8. Remove the muffins from the oven and allow them to cool before adding the icing.
  9. To make the maple icing, combine the powdered sugar, maple syrup, and 1 tablespoon milk. Add additional milk gradually as needed until the icing is thick but easy to drizzle.
  10. If needed, warm the icing for about 10 seconds to make it easier to drizzle.
  11. Drizzle the maple icing over the cooled pumpkin pecan streusel muffins and allow the icing to set before serving.
