Description

Irish Cheese Toasties are a delicious open-faced snack made with aged cheddar, eggs, Dijon mustard, and Worcestershire sauce, all baked to golden perfection on buttered bread. Crispy on the edges and fluffy in the center, they’re perfect for breakfast, lunch, or a savory snack.

Ingredients

Scale
  • 6 slices bread – brown, potato, white, or multigrain
  • 2 tablespoons unsalted butter – softened, for crispiness and richness
  • 3 large eggs – provides structure and puffiness
  • 2 teaspoons Dijon mustard – adds a tangy flavor
  • 2 teaspoons Worcestershire sauce – enhances umami depth
  • 78 ounces aged Irish cheddar cheese – shredded, for a sharp cheesy bite
  • 1/2 teaspoon cracked black pepper – for mild heat and seasoning
  • 1 tablespoon fresh chives – chopped, for garnish and mild onion flavor

Instructions

  1. Preheat the oven to 425°F (220°C). Line a large baking sheet with parchment paper.
  2. Place the bread slices on the baking sheet. Butter the top side of each slice, then flip so the buttered side is facing down.
  3. In a mixing bowl, whisk together the eggs, Dijon mustard, and Worcestershire sauce until well combined.
  4. Stir in the shredded Irish cheddar and cracked black pepper to the egg mixture.
  5. Spoon the cheese and egg mixture evenly over the non-buttered side of each slice, spreading to the edges.
  6. Bake for 8–12 minutes, or until the cheese is puffed and the edges of the bread are golden and crispy.
  7. Remove from the oven, sprinkle with chopped fresh chives, and serve immediately while hot.

Notes

  • Use room-temperature butter for easy spreading.
  • You can prepare the cheese mixture a day in advance and refrigerate it.
  • Experiment with other cheeses like gruyère, gouda, or colby jack for variety.
  • Toasties are best served immediately and don’t reheat well.
