Instructions

  1. Preheat oven to 425°F (220°C). Grease and flour a 9-inch round cake pan.
  2. In a large bowl, whisk together flour, baking soda, and salt.
  3. Gradually stir in the buttermilk until a slightly sticky dough forms.
  4. Turn the dough onto a floured surface and knead gently 3–5 times.
  5. Shape the dough into a ball and press it into the prepared cake pan, forming a disk that reaches the edges.
  6. Use a sharp knife to score a deep “X” across the top of the dough, about 1/4 inch deep.
  7. Cover the pan with an inverted cake pan.
  8. Bake for 25–30 minutes covered. Remove the top pan and bake an additional 10 minutes, or until the crust is golden brown and sounds hollow when tapped.
  9. Let the bread cool slightly before slicing and serving.
