- 2 tbsp extra virgin olive oil

- 1 small red onion, thinly sliced
- ½ cup crumbled feta cheese (about 75g)
- ½ cup toasted pecans (about 60g)
- Juice of 1 lemon
- 1 tbsp honey or maple syrup
- Salt and pepper to taste
Instructions
- Preheat your oven to 425°F (220°C).
- Toss sweet potato cubes with olive oil, salt, and pepper. Spread them on a baking sheet.
- Roast for 25-30 minutes until tender and golden brown, flipping halfway through.
- While the sweet potatoes are roasting, prepare the salad base. In a large bowl, combine fresh spinach, sliced red onion, toasted pecans, and crumbled feta cheese.
- For the dressing, whisk together olive oil, lemon juice, honey or maple syrup, salt, and pepper in a small bowl. Taste and adjust seasoning to your liking.
- Once the sweet potatoes have cooled slightly, add them to the salad bowl. Drizzle with dressing and toss gently until evenly coated.
- Serve immediately or refrigerate for a short time if you prefer a chilled salad.
