Description

This irresistible roasted sweet potato salad combines caramelized sweet potatoes, fresh spinach, tangy feta cheese, and crunchy toasted pecans, all drizzled with a light honey-lemon dressing. Ingredients

  • 2 medium sweet potatoes (about 400g), peeled and cubed
  • 2 tbsp extra virgin olive oil
  • 4 cups fresh spinach (about 120g)
  • 1 small red onion, thinly sliced
  • ½ cup crumbled feta cheese (about 75g)
  • ½ cup toasted pecans (about 60g)
  • Juice of 1 lemon
  • 1 tbsp honey or maple syrup
  • Salt and pepper to taste


Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Toss sweet potato cubes with olive oil, salt, and pepper. Spread them on a baking sheet.
  3. Roast for 25-30 minutes until tender and golden brown, flipping halfway through.
  4. While the sweet potatoes are roasting, prepare the salad base. In a large bowl, combine fresh spinach, sliced red onion, toasted pecans, and crumbled feta cheese.
  5. For the dressing, whisk together olive oil, lemon juice, honey or maple syrup, salt, and pepper in a small bowl. Taste and adjust seasoning to your liking.
  6. Once the sweet potatoes have cooled slightly, add them to the salad bowl. Drizzle with dressing and toss gently until evenly coated.
  7. Serve immediately or refrigerate for a short time if you prefer a chilled salad.

  • For added flavor, roast the sweet potatoes with a sprinkle of cumin, paprika, or cinnamon.
