Instructions

  1. Preheat the oven to 350°F (175°C) and grease and flour three 9-inch round cake pans.
  2. Cream together butter, shortening, and sugar until light and fluffy.
  3. Add egg yolks one at a time, mixing well after each addition.
  4. In a separate bowl, sift together flour and baking soda.
  5. Add dry ingredients to the creamed mixture alternately with buttermilk, starting and ending with flour.
  6. Mix in vanilla extract, shredded coconut, and chopped pecans.
  7. Beat egg whites in a separate bowl until stiff peaks form, then gently fold into the batter.
  8. Divide batter evenly into prepared pans and smooth the tops.
  9. Bake for 25–30 minutes or until a toothpick inserted comes out clean.
  10. Cool cakes in pans for 10 minutes, then transfer to wire racks to cool completely.
  11. Prepare frosting by beating cream cheese and butter until smooth.
  12. Add vanilla extract and gradually mix in powdered sugar until creamy.
  13. Assemble cake layers with frosting between each layer, then frost the top and sides.
  14. Garnish with chopped pecans if desired and serve.
