  • 3 tablespoons red wine vinegar
  • 1 tablespoon Dijon mustard
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon black pepper
  • 1 tablespoon pepperoncini brine


Instructions

  1. Drain and rinse the cannellini beans and chickpeas thoroughly, then pat them dry with paper towels.
  2. Chop the romaine lettuce, halve the cherry tomatoes, thinly slice the red onion, and dice the salami, turkey, and provolone cheese into bite-sized pieces.
  3. In a large mixing bowl, whisk together olive oil, red wine vinegar, Dijon mustard, minced garlic, oregano, black pepper, and pepperoncini brine until well combined.
  4. Add the beans, chickpeas, salami, turkey, provolone cheese, tomatoes, onions, pepperoncini peppers, and banana peppers to the bowl.
  5. Toss the salad gently until all ingredients are evenly coated with the dressing.
  6. Fold in the chopped romaine lettuce and fresh parsley just before serving to keep the salad crisp.
