- 1 cup shredded cheddar cheese
- 8 slices bacon, cooked crispy and crumbled
- 12 large jalapenos
Instructions
- In a bowl, combine cream cheese, cheddar cheese, and 2/3 of the crumbled bacon until blended.
- Cut each jalapeno lengthwise and remove the seeds and veins.
- Spoon the cream cheese mixture into each hollowed-out jalapeno half.
- Arrange the stuffed jalapenos in a single layer on a lightly greased baking sheet.
- Bake in a 450°F (230°C) oven for 10-15 minutes, or until the cheese is lightly browned and bubbly.
- Top with the remaining crumbled bacon and serve immediately.
Notes
- If you want a milder flavor, be sure to remove all the seeds and veins from the jalapenos.
- For a spicier kick, leave some of the seeds in the jalapenos or use hotter peppers like serrano.
- To prepare in advance, stuff the jalapenos and freeze them before baking. When ready to cook, bake from frozen, adding extra time as needed.
