Description

Instructions

  1. Preheat oven to 325°F (163°C).
  2. In a stand mixer fitted with the paddle attachment, cream the butter, icing sugar, salt, and vanilla extract until light and fluffy (about 3 minutes).
  3. Add sifted flour gradually and mix until just combined. A dough ball will begin to form.
  4. Remove the dough and knead by hand until fully combined (about 1 minute). Wrap in plastic and chill in the refrigerator for at least 30 minutes.
  5. On a floured surface, roll out the chilled dough to 1/4-inch thickness. Use a 3-inch round cutter to make base cookies and a 1 1/2-inch heart cutter to create windows in half of them.
  6. Place cookies on a parchment-lined baking sheet and bake for 15–20 minutes, rotating pans halfway through, until edges are light golden.
  7. Let cookies cool completely. Dust the cutout cookies with icing sugar.
  8. Spread about 1 teaspoon of strawberry jam on the flat side of each whole cookie and top with a cutout cookie to form a sandwich.
