Instructions
- Preheat oven to 325°F (163°C).
- In a stand mixer fitted with the paddle attachment, cream the butter, icing sugar, salt, and vanilla extract until light and fluffy (about 3 minutes).
- Add sifted flour gradually and mix until just combined. A dough ball will begin to form.
- Remove the dough and knead by hand until fully combined (about 1 minute). Wrap in plastic and chill in the refrigerator for at least 30 minutes.
- On a floured surface, roll out the chilled dough to 1/4-inch thickness. Use a 3-inch round cutter to make base cookies and a 1 1/2-inch heart cutter to create windows in half of them.
- Place cookies on a parchment-lined baking sheet and bake for 15–20 minutes, rotating pans halfway through, until edges are light golden.
- Let cookies cool completely. Dust the cutout cookies with icing sugar.
- Spread about 1 teaspoon of strawberry jam on the flat side of each whole cookie and top with a cutout cookie to form a sandwich.
