Instructions

  1. Bring a large pot of salted water to a boil. Add the pasta and cook until al dente, about 8–10 minutes. Reserve 1 cup of pasta water, then drain.
  2. In a large skillet, heat olive oil over medium heat. Add chopped onions and sauté for 3–4 minutes until translucent.
  3. Add minced garlic and diced bell pepper. Cook for another 2–3 minutes until soft and aromatic.
  4. Increase heat to medium-high and add shrimp. Season with salt, pepper, and jerk seasoning. Cook for 3–4 minutes until shrimp are pink and opaque.
  5. Pour in coconut milk and add lime juice. Stir and let simmer for 3–5 minutes. Adjust consistency with reserved pasta water if needed.
  6. Add drained pasta to the skillet. Toss gently to coat with sauce and combine well.
  7. Taste and adjust seasoning as desired. Remove from heat and garnish with chopped cilantro.
  8. Serve hot with lime wedges on the side.
