Instructions
- Preheat the oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish.
- Wash and dry the mulberries thoroughly. In a large bowl, combine the mulberries, 1/4 cup sugar, cornstarch, and lemon juice. Stir gently until evenly coated.
- Transfer the berry mixture into the prepared baking dish and spread evenly.
- In a large mixing bowl, beat the softened butter and 2/3 cup sugar until fluffy and pale in color, about 5 minutes.
- Add the egg and vanilla extract to the butter mixture and mix until fully combined.
- In a separate bowl, whisk together the flour, baking soda, and salt.
- Add half of the dry ingredients to the wet ingredients and mix slowly. Pour in the milk and continue mixing until incorporated.
- Add the remaining flour mixture and stir just until combined. Avoid overmixing the batter.
- Drop spoonfuls of the cobbler topping evenly over the mulberry filling, leaving small gaps for steam to escape.
- Bake for 40 to 45 minutes or until the topping is golden brown and the berry filling is bubbling around the edges.
