  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour

  • 1/3 teaspoon salt
  • 1/2 cup full-fat milk
  • Vanilla ice cream for serving

Instructions

  1. Preheat the oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish.
  2. Wash and dry the mulberries thoroughly. In a large bowl, combine the mulberries, 1/4 cup sugar, cornstarch, and lemon juice. Stir gently until evenly coated.
  3. Transfer the berry mixture into the prepared baking dish and spread evenly.
  4. In a large mixing bowl, beat the softened butter and 2/3 cup sugar until fluffy and pale in color, about 5 minutes.
  5. Add the egg and vanilla extract to the butter mixture and mix until fully combined.
  6. In a separate bowl, whisk together the flour, baking soda, and salt.
  7. Add half of the dry ingredients to the wet ingredients and mix slowly. Pour in the milk and continue mixing until incorporated.
  8. Add the remaining flour mixture and stir just until combined. Avoid overmixing the batter.
  9. Drop spoonfuls of the cobbler topping evenly over the mulberry filling, leaving small gaps for steam to escape.
  10. Bake for 40 to 45 minutes or until the topping is golden brown and the berry filling is bubbling around the edges.
  11. Allow the cobbler to cool for at least 15 minutes before serving.
  12. Serve warm with vanilla ice cream or whipped cream if desired.
