Description

Kanten fruit jelly is a healthy and refreshing Japanese dessert made from Kanten agar powder, fruit juice, and fresh fruits. It’s a low-calorie, plant-based dessert that offers a firm, jelly-like texture, making it a perfect treat for vegans and those looking to indulge in a guilt-free sweet.


Ingredients

  • 2 cups Apple juice
  • 4g Kanten powder
  • 2 tbsp sugar (optional)
  • 8 raspberries
  • 1/2 kiwi, diced
  • 8 mandarin segments (from a can of pre-peeled mandarins)


Instructions

  1. Wash the raspberries, cut the kiwi into small pieces, and drain the syrup or juice from the mandarin container.
  2. Pour 2 cups of apple juice into a saucepan and heat over medium heat.
  3. Add 4g of Kanten powder and 2 tbsp sugar (optional), and bring the mixture to a boil.
  4. Reduce the heat and simmer for 1-2 minutes, ensuring the Kanten powder dissolves completely.
  5. Place the fruits into a mold of your choice.
  6. Pour the Kanten mixture over the fruits, making sure they are evenly distributed.
  7. Refrigerate the mixture for at least 30 minutes to set the jelly.
  8. Once set, remove from the mold, slice, and serve.

Notes

  • Use 100% organic cold-pressed apple juice for the best flavor.
  • If you prefer a sugar-free version, you can omit the sugar and use a sugar substitute like erythritol or stevia.
  • You can use a variety of fruits based on your preference, such as strawberries, blueberries, or tropical fruits like mango.
  • Make sure the Kanten mixture is fully dissolved to avoid a gritty texture.
