Ingredients

  • 8 ounces cream cheese, softened
  • 1 cup sugar-free BBQ sauce
  • 2 tablespoons ranch dressing seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon fresh ground black pepper
  • 2 pounds cooked boneless skinless chicken breast or thighs, cubed or shredded
  • 8 slices cooked bacon, chopped
  • 1 cup shredded cheddar cheese
  • 1 cup Monterey jack cheese
  • Green onions for garnish


Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large mixing bowl, combine softened cream cheese, sugar-free BBQ sauce, ranch seasoning, salt, and pepper. Mix until smooth.
  3. Fold in the cooked chicken and chopped bacon. Add 1/2 cup each of shredded cheddar and Monterey Jack cheese, and stir until evenly coated.
  4. Spread the mixture evenly into a greased casserole dish.
  5. Top with the remaining shredded cheeses and extra bacon if desired.
  6. Cover with foil and bake for 25 minutes.
  7. Remove the foil and bake for an additional 6–8 minutes until the cheese is melted and bubbling.
  8. For a golden-brown top, broil for 1–2 minutes while watching closely.
  9. Garnish with green onions before serving.
