Description

  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup (120g) powdered sugar
  • 1 tablespoon key lime juice
  • 1-2 tablespoons milk
  • 1/4 teaspoon vanilla extract (for glaze)
  • 1/2 teaspoon key lime zest (for glaze)
  • Pinch of salt (optional, for glaze)


Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together flour, baking soda, and salt.
  3. In a separate bowl, cream butter, granulated sugar, and brown sugar until light and fluffy.
  4. Add egg and vanilla extract, mixing until fully combined.
  5. Stir in key lime zest for a fresh citrus flavor.
  6. Gradually add dry ingredients into the wet mixture, mixing until just combined.
  7. Roll dough into 1 to 1.5-inch balls and place on the prepared baking sheet.
  8. Bake for 8–11 minutes until edges are set but centers remain soft.
  9. Cool cookies on a rack completely before glazing.
  10. Whisk powdered sugar, lime juice, milk, vanilla, zest, and salt to make the glaze.
  11. Dip or spread glaze over cooled cookies and allow it to set before serving.
