Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, whisk together flour, baking soda, and salt.
- In a separate bowl, cream butter, granulated sugar, and brown sugar until light and fluffy.
- Add egg and vanilla extract, mixing until fully combined.
- Stir in key lime zest for a fresh citrus flavor.
- Gradually add dry ingredients into the wet mixture, mixing until just combined.
- Roll dough into 1 to 1.5-inch balls and place on the prepared baking sheet.
- Bake for 8–11 minutes until edges are set but centers remain soft.
- Cool cookies on a rack completely before glazing.
- Whisk powdered sugar, lime juice, milk, vanilla, zest, and salt to make the glaze.
- Dip or spread glaze over cooled cookies and allow it to set before serving.
