  • 113g unsalted butter, melted (1/2 cup)
  • 2 cans sweetened condensed milk (28 oz total)
  • 180g fresh key lime juice (3/4 cup)
  • 1 tbsp key lime zest
  • 2 tsp vanilla extract
  • 160g sour cream or Greek yogurt (2/3 cup)
  • 2 egg yolks
  • 360g heavy cream, chilled (1 1/2 cups)
  • 2 tbsp granulated sugar


Instructions

  1. Preheat the oven to 350°F and line a 9×9-inch baking pan with parchment paper.
  2. Crush the graham crackers into fine crumbs and mix with melted butter until fully combined.
  3. Press the crumb mixture firmly into the bottom of the prepared pan to form the crust.
  4. Bake the crust for 8 to 10 minutes until lightly golden, then reduce oven temperature to 325°F.
  5. In a large bowl, whisk together sweetened condensed milk, key lime juice, lime zest, vanilla extract, and sour cream until smooth.
  6. Add the egg yolks and whisk gently until fully incorporated.
  7. Pour the filling over the baked crust and smooth the surface evenly.
  8. Bake for 17 to 18 minutes until the edges are set and the center slightly jiggles.
  9. Cool the bars at room temperature, then refrigerate for at least 4 hours or overnight.
  10. Whip the heavy cream with granulated sugar until stiff peaks form.
  11. Spread the whipped cream over the chilled bars.
  12. Lift the bars from the pan using parchment paper, slice into squares, and serve chilled.
