- 360g heavy cream, chilled (1 1/2 cups)

- Crush the graham crackers into fine crumbs and mix with melted butter until fully combined.
- Press the crumb mixture firmly into the bottom of the prepared pan to form the crust.
- Bake the crust for 8 to 10 minutes until lightly golden, then reduce oven temperature to 325°F.
- In a large bowl, whisk together sweetened condensed milk, key lime juice, lime zest, vanilla extract, and sour cream until smooth.
- Add the egg yolks and whisk gently until fully incorporated.
