  • 12 ounces cream cheese, softened
  • 1 cup sugar
  • 3 large eggs
  • 1 can (15 ounces) solid-pack pumpkin
  • 3 large eggs, separated
  • 3/4 cup sugar, divided
  • 1/2 cup 2% milk
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon salt
  • 1 envelope unflavored gelatin
  • 1/4 cup cold water
  • 1 cup heavy whipping cream
  • 3 tablespoons sugar
  • 1/4 teaspoon vanilla extract


Instructions

  1. Preheat oven to 350°F (175°C). Combine graham cracker crumbs, sugar, and cinnamon. Stir in melted butter until well mixed. Press the mixture into a 13×9-inch baking dish.
  2. In a large mixing bowl, beat cream cheese until smooth. Add sugar and eggs, beating until fluffy. Pour this mixture over the prepared crust and bake for 15-20 minutes, or until set. Allow to cool.
  3. In a double boiler, combine pumpkin, egg yolks, 1/2 cup of sugar, milk, cinnamon, and salt. Cook over medium heat, stirring constantly, until it reaches 160°F. Stir in gelatin dissolved in cold water, then allow the mixture to cool to room temperature.
  4. In a separate bowl, whisk egg whites with the remaining 1/4 cup of sugar over low heat until they reach 160°F. Beat until stiff peaks form. Gently fold the whipped egg whites into the cooled pumpkin mixture. Pour over the cream cheese layer in the baking dish.
  5. Refrigerate the layered dessert for at least 4 hours. Whip heavy cream with sugar and vanilla extract until stiff peaks form. Spread over the pumpkin layer.
