Description

Lemon Blueberry Parfaits are a refreshing no-bake dessert made with layers of tangy lemon curd, sweet blueberry compote, crushed cookies, and fluffy whipped cream for a light yet indulgent treat.


Ingredients

  • 2 cups fresh blueberries
  • 1/2 cup granulated sugar
  • 1/2 cup water
  • 1 1/2 tablespoons lemon juice
  • 1 cup lemon curd
  • 1 1/2 cups crushed Nilla wafers (about 30 cookies)
  • 1 1/2 cups whipped topping or whipped cream


Instructions

  1. In a saucepan over medium-high heat, combine 1/2 cup sugar and 1/2 cup water. Stir until the sugar dissolves completely.
  2. Add 2 cups blueberries and simmer for about 5 minutes, stirring occasionally until the berries soften and begin to burst.
  3. Remove from heat and stir in 1 1/2 tablespoons lemon juice. Allow the blueberry compote to cool to room temperature.
  4. Place 1 1/2 cups Nilla wafers in a sealed bag and crush them into small chunks using a rolling pin.
  5. Divide the crushed cookies evenly into serving glasses or jars to form the base layer.
  6. Spoon an even layer of lemon curd over the crushed cookies.
  7. Add a layer of cooled blueberry compote on top of the lemon curd.
  8. Top each parfait with whipped topping or whipped cream.
  9. Serve immediately or refrigerate for 1–2 hours before serving for best flavor.

Notes

  • Allow the blueberry compote to cool completely before layering to prevent melting the whipped topping.
  • Use store-bought lemon curd for convenience or homemade for a richer flavor.
  • Substitute blueberry jam if fresh blueberries are not available.
  • For added texture, keep the cookie crumbs slightly chunky rather than finely crushed.
