- 1/2 cup granulated sugar
- 1/2 cup water
- 1 1/2 tablespoons lemon juice
- 1 cup lemon curd
- 1 1/2 cups crushed Nilla wafers (about 30 cookies)
- 1 1/2 cups whipped topping or whipped cream
Instructions
- In a saucepan over medium-high heat, combine 1/2 cup sugar and 1/2 cup water. Stir until the sugar dissolves completely.
- Add 2 cups blueberries and simmer for about 5 minutes, stirring occasionally until the berries soften and begin to burst.
- Remove from heat and stir in 1 1/2 tablespoons lemon juice. Allow the blueberry compote to cool to room temperature.
- Place 1 1/2 cups Nilla wafers in a sealed bag and crush them into small chunks using a rolling pin.
- Divide the crushed cookies evenly into serving glasses or jars to form the base layer.
- Spoon an even layer of lemon curd over the crushed cookies.
- Add a layer of cooled blueberry compote on top of the lemon curd.
- Top each parfait with whipped topping or whipped cream.
- Serve immediately or refrigerate for 1–2 hours before serving for best flavor.

- Allow the blueberry compote to cool completely before layering to prevent melting the whipped topping.
- Use store-bought lemon curd for convenience or homemade for a richer flavor.
- Substitute blueberry jam if fresh blueberries are not available.
