Instructions

  1. Preheat the oven to 350°F and prepare a 9×5-inch loaf pan by greasing and lightly flouring it.
  2. Whisk together the flour, baking powder, and salt in a medium bowl until evenly combined.
  3. Beat the eggs until slightly fluffy, then add sugar, oil, buttermilk, lemon juice, and lemon zest. Mix until smooth.
  4. Fold the shredded zucchini into the wet mixture until evenly distributed.
