Instructions

  1. Preheat the oven to 325°F (163°C) and lightly grease a springform pan.

  3. Press the mixture firmly into the bottom of the pan to form the crust and refrigerate for 20–30 minutes.

  6. Add eggs one at a time, mixing gently after each addition.
  7. Stir in lemon juice, lemon zest, vanilla extract, sour cream, and salt until smooth.

  9. Bake for 50–60 minutes, until the edges are set and the center slightly jiggles.
  10. Turn off the oven and let the cheesecake cool inside with the door slightly open.
  11. Refrigerate for at least 4 hours or overnight before serving.
