- 1/4 teaspoon salt
Instructions
- Preheat the oven to 325°F (163°C) and lightly grease a springform pan.
- In a bowl, mix graham cracker crumbs, melted butter, and strawberries until well combined.
- Press the mixture firmly into the bottom of the pan to form the crust and refrigerate for 20–30 minutes.
- In a large bowl, beat the cream cheese until smooth and creamy.
- Add sugar and mix until fully incorporated.
- Add eggs one at a time, mixing gently after each addition.
- Stir in lemon juice, lemon zest, vanilla extract, sour cream, and salt until smooth.
- Pour the filling over the chilled strawberry crust and smooth the top.
- Bake for 50–60 minutes, until the edges are set and the center slightly jiggles.
- Turn off the oven and let the cheesecake cool inside with the door slightly open.
- Refrigerate for at least 4 hours or overnight before serving.
