  • 12 tablespoons (170 g) unsalted butter, melted
  • 1 can (14 oz / 396 g) sweetened condensed milk
  • 4 large egg yolks
  • 2 tablespoons (30 ml) heavy cream
  • 1/8 teaspoon salt (for filling)
  • 2/3 cup (157 ml) fresh lemon juice


Instructions

  1. Preheat the oven to 350°F (175°C) and line a 9×9-inch baking pan with parchment paper.
  2. In a large bowl, whisk together flour, granulated sugar, brown sugar, salt, and baking powder.
  3. Add melted butter and mix with a fork until the mixture becomes crumbly but holds together when pressed.
  4. Press 2/3 of the crumb mixture firmly into the prepared pan to form the crust.
  5. Bake the crust for 15 minutes until lightly golden.
  6. In another bowl, whisk together sweetened condensed milk, egg yolks, heavy cream, and salt until smooth.
  7. Slowly drizzle in the lemon juice while whisking continuously until fully combined.
  8. Pour the lemon filling over the hot crust evenly.
  9. Sprinkle the remaining crumble mixture evenly over the top.
  10. Bake for another 15 minutes or until the top is lightly golden and the center is set but slightly jiggly.
  11. Allow the bars to cool completely, then refrigerate for at least 4 hours or overnight.
  12. Slice into squares and serve chilled.
