Description

Lemon Garlic Roasted Turkey Breast is a flavorful and easy-to-make dish, perfect for any occasion. The combination of fresh lemon, garlic, and herbs infuses the turkey with bright and savory flavors, while keeping it moist and tender. This dish is ideal for smaller gatherings, weeknight dinners, or as a healthy holiday alternative.

Ingredients

  • Boneless Turkey Breast (3-4 pounds): The main star of the dish, providing a lean and tender protein source.
  • Lemons (2 large): One lemon for zesting and juicing, the other for slicing to infuse the turkey with citrusy freshness.
  • Garlic (6-8 cloves): Fresh garlic adds a savory and aromatic flavor.
  • Fresh Herbs (2 tablespoons, mixed rosemary, thyme, or sage): These herbs add depth and richness to the flavor profile.
  • Olive Oil (3 tablespoons): Helps keep the turkey moist and aids in browning.
  • Salt (1.5 teaspoons): Enhances flavor and ensures even seasoning.
  • Black Pepper (1 teaspoon): Adds a subtle hint of spice and complexity to the dish.
  • White Wine or Chicken Broth (optional, 1/2 cup): Adds moisture during roasting and creates delicious pan juices.

Instructions

  1. Preheat the oven to 375°F (190°C) and prepare the roasting pan by placing the turkey breast inside.
  2. Pat the turkey breast dry using paper towels to help crisp up the skin during roasting.
  3. In a small bowl, combine the zest and juice of one lemon, minced garlic, chopped fresh herbs, olive oil, salt, and black pepper. Mix until well combined.
  4. Rub the lemon garlic herb mixture all over the turkey breast, making sure to get under the skin if possible.
  5. Slice the remaining lemon and scatter the thick slices around the turkey in the roasting pan.
  6. If using, pour white wine or chicken broth into the bottom of the pan to keep the turkey moist and create flavorful pan juices.
  7. Roast the turkey breast for 1 to 1.5 hours, or until the internal temperature reaches 165°F (74°C). Use a meat thermometer for accuracy.
  8. Optionally, baste the turkey with the pan juices every 20-30 minutes for added moisture.
  9. Once the turkey is done, remove it from the oven and let it rest for 10-15 minutes before carving.
  10. Carve the turkey breast against the grain and serve with the pan juices poured over the top for extra flavor.

Notes

  • For extra juiciness, you can brine the turkey breast ahead of time for a few hours or overnight in a mixture of water, salt, lemon slices, and garlic.
  • To ensure even cooking, check the turkey’s internal temperature with a meat thermometer before removing it from the oven.
  • If you prefer a more golden-brown crust, you can baste the turkey with the pan juices every 20 minutes during the roasting process.
  • Leftover turkey can be used for sandwiches, wraps, or added to salads for a quick meal.
