- 1 cup granulated sugar (200 grams) (for candied lemon, optional)
- 1 cup water (250 milliliters) (for candied lemon, optional)
- 2 small lemons (for candied lemon, optional)
Instructions
- Preheat your oven to 360°F (180°C). Line a 2-pound loaf tin with parchment paper.
- Whisk the eggs and sugar together until pale and creamy. Add the lemon juice, melted butter, and lavender. Stir until well combined.
- Sift the flour and baking powder into the wet ingredients. Mix with an electric mixer until fully incorporated.
- Pour the batter into the prepared loaf tin and smooth the top.
- Bake for 40-45 minutes or until a skewer inserted comes out clean. Let it cool.
- Immediately after removing the loaf from the oven, pour the sweetened lemon juice over the loaf.
- Optional: Decorate with candied lemon slices.
Notes
- Do not overbake the loaf, as it could result in a dry texture.
- Store the loaf in an airtight container for up to 3 days or refrigerate for up to 5 days.
- If you do not want to use candied lemon slices, you can skip them or drizzle with a sugar glaze instead.
- The lavender should be used in moderation to avoid overpowering the flavor.
