Description

Lemon Lush Dessert is a refreshing layered dessert made with a buttery shortbread crust, creamy cheesecake filling, smooth lemon pudding, and fluffy whipped topping. This chilled dessert is perfect for spring and summer gatherings, potlucks, holidays, and family parties.

  • 8 ounces whipped topping for topping layer
  • Extra lemon zest for garnish
  • Lemon slices for garnish


Instructions

  1. Preheat the oven to 350°F and grease a 9×13-inch baking dish.
  2. In a large bowl, combine flour, 2 tablespoons sugar, chopped nuts, and softened butter until crumbly.
  3. Press the crust mixture evenly into the prepared baking dish and bake for 15 to 18 minutes or until lightly golden brown. Let the crust cool completely.
  4. In a mixing bowl, beat the cream cheese and 1 cup sugar until smooth and creamy.
  5. Mix in the lemon zest, lemon juice, and 8 ounces whipped topping until fully combined.
  6. Spread the cream cheese layer evenly over the cooled crust and refrigerate for 30 minutes.
  7. In another bowl, whisk together the lemon pudding mix and cold milk until thick and smooth.
  8. Spread the pudding layer over the cream cheese layer and refrigerate for 15 minutes until set.
  9. Spread the remaining whipped topping evenly over the pudding layer.
  10. Garnish with lemon zest and lemon slices if desired.
  11. Refrigerate the dessert for at least 1 hour before slicing and serving.
