Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a mixing bowl, cream together the softened butter and granulated sugar until smooth and fluffy.
- Add the egg, vanilla extract, lemon juice, and lemon zest, then mix until fully combined.
- Incorporate the flour, baking powder, baking soda, and salt. Mix until a soft dough forms.
- Scoop tablespoon-sized portions of dough and roll into balls. Place them 1.5 inches apart on the baking sheet.
- Bake for 7 minutes or until the edges are set but not browned.
- Remove from the oven and let cookies cool on the baking sheet for 10 minutes before transferring to a rack.
- Prepare the glaze by mixing powdered sugar, lemon juice, and optional vanilla until smooth.
- Drizzle the glaze over cooled cookies and let it set before serving.
