Description

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, cream together the softened butter and granulated sugar until smooth and fluffy.
  3. Add the egg, vanilla extract, lemon juice, and lemon zest, then mix until fully combined.
  4. Incorporate the flour, baking powder, baking soda, and salt. Mix until a soft dough forms.
  5. Scoop tablespoon-sized portions of dough and roll into balls. Place them 1.5 inches apart on the baking sheet.
  6. Bake for 7 minutes or until the edges are set but not browned.
  7. Remove from the oven and let cookies cool on the baking sheet for 10 minutes before transferring to a rack.
  8. Prepare the glaze by mixing powdered sugar, lemon juice, and optional vanilla until smooth.
  9. Drizzle the glaze over cooled cookies and let it set before serving.
