Description

Lentil patties are crispy on the outside and tender on the inside, made with wholesome lentils, herbs, and spices. This easy Mediterranean-inspired recipe is perfect for a quick, healthy, and protein-packed meal.


Ingredients

  • 2 cans (15 oz each) lentils, drained
  • 1 large egg
  • 1/2 cup grated parmesan cheese
  • 4 tablespoons all-purpose flour (or chickpea flour)
  • 1/4 cup fresh parsley, finely chopped
  • 1 medium onion, finely chopped
  • 3 garlic cloves, finely grated
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon salt
  • 1/8 teaspoon black pepper
  • 2 tablespoons olive oil (for frying or brushing)
  • 1 lemon, cut into wedges (for serving)


Instructions

  1. Add the drained lentils, egg, parmesan cheese, flour, parsley, onion, garlic, cumin, coriander, salt, and black pepper to a food processor. Pulse a few times until the mixture is combined but still slightly chunky.
  2. Transfer the mixture to a bowl and shape it into about 12 equal-sized patties using your hands.
  3. For pan-frying, heat olive oil in a nonstick skillet over medium heat and cook the patties for about 5 minutes on each side until golden and crispy.
  4. For baking, preheat the oven to 400°F (200°C), brush the patties with olive oil, and bake for 20 minutes or until golden brown.
  5. For air frying, brush the patties and air fryer basket with oil, then cook at 400°F (200°C) for 10 minutes until crisp.
  6. Serve the lentil patties warm with lemon wedges and your favorite dipping sauce.

Notes

  • Do not overblend the mixture to keep a good texture.
  • Grate the garlic finely to ensure it cooks properly.
  • If the mixture is too wet, add more flour; if too dry, add a little water.
  • Pan-frying yields the crispiest lentil patties.
  • Store leftovers in the refrigerator for up to 3 days or freeze for up to 3 months.
