Description
Lentil patties are crispy on the outside and tender on the inside, made with wholesome lentils, herbs, and spices. This easy Mediterranean-inspired recipe is perfect for a quick, healthy, and protein-packed meal.
Ingredients
Scale
- 2 cans (15 oz each) lentils, drained
- 1 large egg
- 1/2 cup grated parmesan cheese
- 4 tablespoons all-purpose flour (or chickpea flour)
- 1/4 cup fresh parsley, finely chopped
- 1 medium onion, finely chopped
- 3 garlic cloves, finely grated
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon salt
- 1/8 teaspoon black pepper
- 2 tablespoons olive oil (for frying or brushing)
- 1 lemon, cut into wedges (for serving)
Instructions
- Add the drained lentils, egg, parmesan cheese, flour, parsley, onion, garlic, cumin, coriander, salt, and black pepper to a food processor. Pulse a few times until the mixture is combined but still slightly chunky.
- Transfer the mixture to a bowl and shape it into about 12 equal-sized patties using your hands.
- For pan-frying, heat olive oil in a nonstick skillet over medium heat and cook the patties for about 5 minutes on each side until golden and crispy.
- For baking, preheat the oven to 400°F (200°C), brush the patties with olive oil, and bake for 20 minutes or until golden brown.
- For air frying, brush the patties and air fryer basket with oil, then cook at 400°F (200°C) for 10 minutes until crisp.
- Serve the lentil patties warm with lemon wedges and your favorite dipping sauce.
Notes
- Do not overblend the mixture to keep a good texture.
- Grate the garlic finely to ensure it cooks properly.
- If the mixture is too wet, add more flour; if too dry, add a little water.
- Pan-frying yields the crispiest lentil patties.
- Store leftovers in the refrigerator for up to 3 days or freeze for up to 3 months.
