Description

Leprechaun Bait is a festive sweet-and-salty no-bake snack mix made with Chex, Lucky Charms, pretzels, green M&M’s, and extra marshmallows, all coated in smooth melted white chocolate for an easy St. Patrick’s Day treat.

  • 3 cups Chex cereal: crunchy base that holds the white chocolate coating
  • 1 cup pretzel sticks: adds salty snap and balance
  • 1 1/2 cups Lucky Charms cereal: extra crunch with fun cereal pieces
  • 2/3 cup green M&M’s: chocolate bites and festive color
  • 1/2 cup Lucky Charms marshmallows: sweet pops of color and texture
  • 8 oz white chocolate almond bark: smooth, easy-melt coating that binds everything


Instructions

  1. Add the white chocolate almond bark to a large microwave-safe bowl. Heat for 1 minute, then stir well. Continue heating in 20-second intervals, stirring each time, until completely melted and smooth.
  2. In a large bowl, combine the Chex cereal, pretzel sticks, Lucky Charms cereal, and about half of the green M&M’s.
  3. Pour the melted white chocolate over the cereal mixture and stir gently until everything is evenly coated.
  4. Spread the coated mixture onto a parchment-lined baking sheet in a single layer.
  5. Immediately sprinkle the remaining green M&M’s and the Lucky Charms marshmallows over the top so they stick while the coating sets.
  6. Let the mixture sit at room temperature for about 1 hour, or until the chocolate is fully hardened.
  7. Break into bite-sized pieces and serve.

Notes

  • Use almond bark or melting white chocolate for the smoothest, easiest melt.
  • Sprinkle the M&M’s and marshmallows after spreading so they stay visible instead of getting fully coated.
  • Store in an airtight container at room temperature for 2–3 days for best crunch.
  • To freeze, store in an airtight container for up to 3 months and thaw at room temperature before serving.
  • If you don’t have extra Lucky Charms marshmallows, pick out about 1/2 cup from a regular box of cereal.
