- 1 1/2 cups graham cracker crumbs
- 1/3 cup unsalted butter, melted
- 1/4 cup granulated sugar
- 1 can (14 oz) sweetened condensed milk
- 1/2 cup fresh lime juice
- 1 tablespoon lime zest
- 2 large egg yolks
- 1 cup whipped cream or whipped topping
- Optional: lime slices or extra zest for garnish
Instructions
- Preheat oven to 350°F (175°C) and lightly grease a muffin tin or line with paper liners.
- In a bowl, mix graham cracker crumbs, melted butter, and sugar until combined.
- Press the mixture firmly into the bottom and sides of each muffin cup to form crusts.
- Bake for 8–10 minutes until lightly golden, then remove and let cool slightly.
- In another bowl, whisk together sweetened condensed milk, lime juice, lime zest, and egg yolks until smooth.
- Pour the lime filling evenly into each crust.
- Bake for 12–15 minutes until the filling is set but slightly soft in the center.
- Remove from oven and cool at room temperature, then refrigerate for at least 2 hours.
- Top with whipped cream and garnish with lime slices or zest before serving.
- Serve chilled for best flavor and texture.
