- 6 large russet potatoes (about 2.5 lbs), peeled and diced
- 1/4 cup unsalted butter
- 4 oz cream cheese, softened
- 2/3 cup sour cream
- 1/2 cup milk (2% or whole)
- 1/2 teaspoon garlic powder
- 1 teaspoon salt (or to taste)
- 1/2 teaspoon black pepper
- 2 cups shredded cheddar cheese, divided
- 1 1/2 cups cooked bacon, crumbled
- 1/4 cup green onions, chopped
Instructions
- Preheat the oven to 375°F (190°C) and grease a 9×13-inch casserole dish with nonstick spray.
- Place the diced potatoes in a large pot, cover with water, and bring to a boil. Cook for 10–15 minutes or until fork-tender.
- Drain the potatoes and return them to the pot. Allow excess moisture to evaporate.
- Add butter, cream cheese, sour cream, and milk to the potatoes. Gently fold until creamy but still slightly chunky.
- Mix in garlic powder, salt, pepper, 1 1/2 cups cheddar cheese, and 1 cup of crumbled bacon.
- Transfer the mixture into the prepared casserole dish and spread evenly.
- Top with the remaining cheese and bacon.
- Bake for 25–30 minutes until the cheese is melted and bubbly.
- Remove from the oven, garnish with chopped green onions, and serve warm.
