Description

Loaded Baked Potato Casserole is a creamy, cheesy comfort food made with tender potatoes, crispy bacon, and rich dairy ingredients, baked to perfection for a hearty and satisfying side dish.

  • 6 large russet potatoes (about 2.5 lbs), peeled and diced
  • 1/4 cup unsalted butter
  • 4 oz cream cheese, softened
  • 2/3 cup sour cream
  • 1/2 cup milk (2% or whole)
  • 1/2 teaspoon garlic powder
  • 1 teaspoon salt (or to taste)
  • 1/2 teaspoon black pepper
  • 2 cups shredded cheddar cheese, divided
  • 1 1/2 cups cooked bacon, crumbled
  • 1/4 cup green onions, chopped


Instructions

  1. Preheat the oven to 375°F (190°C) and grease a 9×13-inch casserole dish with nonstick spray.
  2. Place the diced potatoes in a large pot, cover with water, and bring to a boil. Cook for 10–15 minutes or until fork-tender.
  3. Drain the potatoes and return them to the pot. Allow excess moisture to evaporate.
  4. Add butter, cream cheese, sour cream, and milk to the potatoes. Gently fold until creamy but still slightly chunky.
  5. Mix in garlic powder, salt, pepper, 1 1/2 cups cheddar cheese, and 1 cup of crumbled bacon.
  6. Transfer the mixture into the prepared casserole dish and spread evenly.
  7. Top with the remaining cheese and bacon.
  8. Bake for 25–30 minutes until the cheese is melted and bubbly.
  9. Remove from the oven, garnish with chopped green onions, and serve warm.
