These Loaded Chili Cheese Fries are a finger food masterpiece! They are made with crispy fries layered with melty cheddar, beef chili, and the best toppings like red onions, cilantro, and sour cream. The combination of rich, savory chili and gooey cheese on top of crispy fries makes this dish a perfect treat for parties, game days, or any casual gathering.
Ingredients
- Frozen or Fresh Fries – 3-4 lbs
- Shredded Cheddar Cheese – 2 cups
- Ground Beef – 2 lbs
- White Onion, chopped – 1
- Garlic, minced – 2.5 tbsp
- Guajillo Chili Powder – 2 tbsp
- Ground Cumin – 1.5 tbsp
- Garlic Powder – 1.5 tbsp
- Black Pepper – 1 tbsp
- Kosher Salt – 1 tbsp
- Beef Broth – 2 cups
- Chipotle Puree – 2 tbsp
- Chopped Tomatoes – 28 oz can
- Diced Red Onions for garnish
- Sliced Jalapeños for garnish
- Chopped Cilantro for garnish
- Sour Cream for garnish
Instructions
- Preheat a medium heat fire for direct cooking (around 350ºF). Add a Dutch oven over the fire and drizzle in some cooking oil. Let it preheat for 2 minutes, then add the ground beef and cook for 2.5-3 minutes until browned. Remove the beef and set it aside.
- In the same Dutch oven, add the chopped white onion and minced garlic. Sauté for 2 minutes until fragrant.
- Stir in the guajillo chili powder, ground cumin, garlic powder, black pepper, and kosher salt. Let the spices cook with the onions and garlic for 1 minute, stirring occasionally.
- Return the browned beef to the Dutch oven and add the beef broth, chipotle puree, and chopped tomatoes. Stir everything well and cover the Dutch oven.
- Reduce the heat to 300-325ºF and let the chili simmer for 1.5-2 hours, stirring occasionally. Adjust the thickness of the chili by adding more beef broth if needed.
- Meanwhile, cook your fries (either frozen or homemade) until crispy.
- Once the chili is done, arrange the fries on a large serving platter. Top them with shredded cheddar cheese, followed by scoops of chili. Add more cheese on top and finish with your favorite toppings like diced red onions, sliced jalapeños, chopped cilantro, and a dollop of sour cream.
- Serve immediately and enjoy!
Notes
- For a thicker chili, let it simmer longer or reduce the beef broth. For a thinner consistency, add more beef broth.
- Choose thick-cut fries like steak fries or waffle fries for the best texture.
