Description
Maple Fig Tarte Tatin is an easy French-inspired upside-down tart made with fresh figs, buttery maple caramel, vanilla, and flaky puff pastry. It is baked until deeply golden, inverted onto a serving plate, and best served warm with vanilla ice cream.

- 1/2 cup pure maple syrup
- 1 teaspoon vanilla extract
- 10-12 fresh figs, halved
- 1 sheet frozen puff pastry, thawed
- Fresh thyme, optional, for garnish
- Fresh berries, optional, for garnish
- Vanilla ice cream, optional, for serving
Instructions
- Preheat the oven to 375°F (190°C).
- Melt the salted butter and maple syrup together in a 10-inch oven-safe skillet over medium heat.
- Bring the mixture to a boil, reduce the heat to medium, and cook for 3 to 4 minutes, until slightly thickened.
- Remove the skillet from the heat and stir in the vanilla extract.
- Arrange the fresh figs cut-side down in the skillet, overlapping them slightly if necessary.
- Place the puff pastry over the figs. Press it down gently and tuck the edges around and underneath the fruit as well as possible.
- Use a sharp knife to cut 3 small vents in the center of the puff pastry.
- Place the skillet on a baking sheet and bake for 30 to 35 minutes, or until the puff pastry is puffed and deeply golden brown.
- Remove the tart from the oven and let it rest in the skillet for about 2 minutes.
- Place a large serving plate over the skillet and carefully invert the tart onto the plate while the caramel is still warm.
- Garnish with fresh thyme and berries if desired, and serve warm with vanilla ice cream.
Notes
- Use ripe but firm fresh figs so they hold their shape during baking and inversion.
- Keep the puff pastry cold until you are ready to place it over the figs for the flakiest texture.
- Do not let the tart cool for too long in the skillet, as the maple caramel may begin to stick.
- Use a 10-inch oven-safe skillet, such as cast iron, for even cooking.
- Bake the puff pastry until deeply golden rather than pale to help prevent a soggy crust.
- If a fig sticks to the skillet during inversion, carefully place it back onto the tart.
- The tart is best served warm shortly after baking.
