- 2 tablespoons fresh parsley, chopped (for garnish)
Instructions
- Preheat the oven to 400°F (205°C).
- Peel the carrots and slice them in half lengthwise. If they are very thick, cut them into quarters.
- Arrange the carrots in a single layer on a large baking sheet.
- Whisk together the olive oil and pure maple syrup until well combined.
- Drizzle the maple mixture over the carrots and toss until evenly coated.
- Sprinkle with sea salt and cayenne pepper, if using.
- Scatter the rosemary sprigs over the carrots.
- Roast for 25 minutes, turning the carrots halfway through cooking.
- Continue roasting until the carrots are tender and lightly caramelized around the edges.
- Transfer to a serving platter, garnish with chopped fresh parsley, and serve warm.

- Do not overcrowd the baking sheet to ensure proper roasting instead of steaming.
