Description

These Maple Roasted Carrots are tender, caramelized, and coated in a sweet maple glaze with fragrant rosemary. This easy oven-roasted side dish is naturally vegan, gluten-free, and perfect for weeknight dinners or holiday meals like Thanksgiving, Christmas, and Easter.


Ingredients

  • 2 pounds large carrots, peeled and halved lengthwise
  • 2 tablespoons pure maple syrup
  • 2 tablespoons olive oil
  • 1 teaspoon sea salt
  • 1/4 teaspoon cayenne pepper (optional)
  • 2 sprigs fresh rosemary
  • 2 tablespoons fresh parsley, chopped (for garnish)


Instructions

  1. Preheat the oven to 400°F (205°C).
  2. Peel the carrots and slice them in half lengthwise. If they are very thick, cut them into quarters.
  3. Arrange the carrots in a single layer on a large baking sheet.
  4. Whisk together the olive oil and pure maple syrup until well combined.
  5. Drizzle the maple mixture over the carrots and toss until evenly coated.
  6. Sprinkle with sea salt and cayenne pepper, if using.
  7. Scatter the rosemary sprigs over the carrots.
  8. Roast for 25 minutes, turning the carrots halfway through cooking.
  9. Continue roasting until the carrots are tender and lightly caramelized around the edges.
  10. Transfer to a serving platter, garnish with chopped fresh parsley, and serve warm.

  • Use pure maple syrup for the best flavor and caramelization.
  • Do not overcrowd the baking sheet to ensure proper roasting instead of steaming.
  • Flip the carrots halfway through cooking for even browning.
  • Fresh rosemary provides the best aroma, but dried rosemary may be substituted in a smaller amount.
