Description
Maple Vanilla Candied Pecans are sweet, crunchy, and warmly spiced nuts coated in pure maple syrup, fragrant vanilla extract, ground cinnamon, and a touch of cayenne pepper. Made on the stovetop without refined white sugar or egg whites, these homemade candied pecans are naturally sweetened, vegan, and gluten-free when prepared with suitable ingredients. They are perfect for snacking, sprinkling over salads and desserts, adding crunch to oatmeal and roasted vegetables, or packaging as thoughtful homemade holiday gifts.
Ingredients
- 2 cups raw pecan halves
- 1/2 cup pure maple syrup
- 1 teaspoon vanilla extract
- 1 1/2 teaspoons ground cinnamon
- 1/2 teaspoon fine sea salt
- 1/8 teaspoon ground cayenne pepper, optional
Instructions
- Add the raw pecan halves, pure maple syrup, vanilla extract, ground cinnamon, fine sea salt, and optional cayenne pepper to a medium sauté pan. Toss with a spoon or spatula until the pecans are evenly coated.
- Place the pan over medium heat and cook until the maple syrup reaches a gentle simmer, stirring occasionally.
- Reduce the heat to medium-low and continue cooking for approximately 20–25 minutes, stirring frequently until the liquid evaporates and the maple syrup begins to crystallize around the pecans.
- During the first stage, the syrup will be thin and liquid. Stir every 1–2 minutes to distribute the syrup evenly.
- As the syrup thickens, the bubbles will become slower and the pecans may begin sticking together. Stir about once a minute and break apart any clusters that form.
- Watch for the coating to become grainy as the maple syrup crystallizes into tiny sugar-like particles. Once crystallization begins, cook for approximately 1 additional minute, stirring every 20 seconds to prevent burning.
- Immediately transfer the candied pecans to a parchment-lined baking sheet. Spread them into an even layer and separate any clusters with a spatula while they are still warm.
- Allow the pecans to cool completely at room temperature until the coating sets. Serve as a snack or use them as a topping for salads, oatmeal, roasted vegetables, and desserts.
- Store leftover Maple Vanilla Candied Pecans in an airtight container in a cool, dry place.
Notes
- Use 100% pure maple syrup for the best flavor. Pancake syrup may produce a different taste and texture.
- Vanilla extract adds a warm aroma and complements the maple syrup. It can be omitted for a simpler maple-cinnamon flavor.
- Cook the pecans low and slow. High heat can cause the syrup to burn before the liquid evaporates.
- Stir frequently, especially during the final few minutes of cooking, when the syrup thickens and begins to crystallize.
- The maple-sweetened coating will not become quite as crispy as traditional candied pecans made with granulated sugar and egg whites.
- Cayenne pepper is optional. Omit it for a mild flavor or increase it to taste for a spicier variation.
- For a different finishing touch, sprinkle flaky sea salt over the pecans immediately after spreading them on parchment paper.
- Ground ginger, nutmeg, allspice, or pumpkin pie spice can be substituted for some or all of the cinnamon.
- Walnuts, almonds, pistachios, or cashews can be substituted for pecans. Cooking time may vary depending on the type of nut.
- Spread the hot pecans on parchment paper immediately after cooking to prevent large clusters from forming.
- Allow the pecans to cool completely before storing them in an airtight container at room temperature for up to 2 weeks. Protect them from humidity.
- The recipe can be halved or doubled as needed. Cooking time may vary with the batch size.
- This recipe is naturally vegan and can be gluten-free when all ingredients meet the relevant dietary requirements.
