Description

This Marinated Chickpea and Feta Salad is a fresh Mediterranean-inspired dish made with protein-packed chickpeas, creamy feta cheese, crisp vegetables, and a bright lemon herb marinade. Perfect for meal prep, healthy lunches, or light dinners, this easy salad delivers bold flavor, refreshing texture, and wholesome ingredients in every bite.

Ingredients

Scale
  • 2 cans (15 oz each) chickpeas, drained and rinsed
  • 1 cup feta cheese, crumbled
  • 1 medium cucumber, diced
  • 6 radishes, thinly sliced
  • 1 bunch asparagus, trimmed and cut into 1-inch pieces
  • 3 green onions, thinly sliced
  • 1/4 cup fresh parsley, chopped
  • 2 tablespoons fresh dill, chopped
  • 1/4 cup olive oil
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon red wine vinegar
  • 1 teaspoon Dijon mustard
  • 2 garlic cloves, minced
  • 1 teaspoon honey
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Bring a small pot of water to a boil and blanch the asparagus pieces for 2 minutes. Transfer immediately to ice water to cool, then drain well.
  2. In a large mixing bowl, whisk together olive oil, lemon juice, red wine vinegar, Dijon mustard, minced garlic, honey, salt, and black pepper until combined.
  3. Add the chickpeas, cucumber, radishes, asparagus, green onions, parsley, and dill to the bowl.
  4. Toss everything thoroughly so the vegetables and chickpeas are evenly coated in the marinade.
  5. Gently fold in the crumbled feta cheese without overmixing.
  6. Cover the salad and refrigerate for at least 30 minutes before serving to allow the flavors to develop.
  7. Stir lightly before serving and garnish with extra herbs or black pepper if desired.

Notes

  • For the best flavor, let the salad marinate for at least 1 hour before serving.
  • Block feta packed in brine provides a creamier texture than pre-crumbled feta.
  • This salad can be stored in the refrigerator for up to 4 days.
  • Add avocado or quinoa for a heartier meal option.
  • Use fresh herbs for the brightest Mediterranean flavor.
