Instructions
- Heat olive oil in a large pot over medium heat. Season the chicken breasts with salt and pepper, then cook for 6 to 8 minutes per side until golden brown and fully cooked. Remove the chicken from the pot and shred or slice it.
- In the same pot, add the diced onion and cook for 3 to 4 minutes until softened. Stir in the garlic, thyme, oregano, and red pepper flakes and cook for 1 minute until fragrant.
- Pour in the chicken broth and add the chopped sun-dried tomatoes. Bring the soup to a gentle simmer and cook for 5 to 7 minutes to blend the flavors.
- Reduce the heat slightly and stir in the heavy cream. Return the shredded chicken to the pot and simmer for another 5 minutes.
- Add the chopped spinach and Parmesan cheese. Stir until the spinach wilts and the cheese fully melts into the broth.
- Taste and adjust seasoning with additional salt and pepper if needed.
