  • 2 tbsp olive oil
  • 1 medium onion, diced

  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1/2 tsp red pepper flakes
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1/2 cup sun-dried tomatoes, chopped
  • 2 cups spinach leaves, roughly chopped
  • 1/2 cup grated Parmesan cheese
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp fresh basil, chopped for garnish


Instructions

  1. Heat olive oil in a large pot over medium heat. Season the chicken breasts with salt and pepper, then cook for 6 to 8 minutes per side until golden brown and fully cooked. Remove the chicken from the pot and shred or slice it.
  2. In the same pot, add the diced onion and cook for 3 to 4 minutes until softened. Stir in the garlic, thyme, oregano, and red pepper flakes and cook for 1 minute until fragrant.
  3. Pour in the chicken broth and add the chopped sun-dried tomatoes. Bring the soup to a gentle simmer and cook for 5 to 7 minutes to blend the flavors.
  4. Reduce the heat slightly and stir in the heavy cream. Return the shredded chicken to the pot and simmer for another 5 minutes.
  5. Add the chopped spinach and Parmesan cheese. Stir until the spinach wilts and the cheese fully melts into the broth.
  6. Taste and adjust seasoning with additional salt and pepper if needed.
  7. Ladle the Marry Me Chicken Soup into bowls and garnish with fresh basil before serving hot.
